Mandarin, Fennel & Burrata Salad

Ingredients
5 mandarins, peeled and sliced
1 fennel bulb, thinly sliced
115g burrata
¼ cup sliced almonds
Dressing
Juice of 1 mandarin
3 tablespoons olive oil
2 tablespoons honey
Pinch pepper
Method
In a small bowl, mix together dressing ingredients
Place the sliced fennel and mandarins on a serving plate or bowl
Place the burrata in the middle and garnish with sliced almonds and fennel fronds
Top with dressing and serve fresh
