Mushroom & Caramelised Onion Tart

Ingredients
2 cups mushrooms, sliced
10 filo pastry sheets
1 onion, thinly sliced
3 tablespoons oil
½ cup ricotta cheese
2-3 tablespoons balsamic vinegar
Pinch salt & freshly ground pepper
Method
Pre heat the oven to 180°C on fan bake. Line an oven tray with baking paper
Heat a pan over medium heat, add the oil, balsamic vinegar, onion and stir continuously until softened, about 8 to 10 minutes. Sprinkle in the salt, add the sliced mushrooms and continue stirring. Turn heat to low and cook for a remaining 10 minutes
Place 1 filo sheet on the lined oven tray. Lightly brush filo sheet with oil, and top with another filo sheet. Repeat layers with remaining filo sheets and oil
Spread ricotta cheese onto the filo sheet and cover with mushroom and onions. Season with salt & pepper. Place onto the oven tray and bake for 20–25 minutes or until the filo is crispy. Enjoy warm
