Orange & Cinnamon Loaf
Serves: 8

Cooking: 50 minutes
Ingredients
3 medium oranges
2 eggs
1¼ cup brown sugar
100 grams butter, softened
2 cups flour
3 teaspoons baking powder
1 teaspoon cinnamon
Method
Preheat the oven to 180 degrees. Line a loaf tin with baking paper
In a large mixing bowl, cream the butter and sugar. Add eggs and beat until smooth
Grate orange zest from 1 orange and add to the bowl. Juice 3 oranges and add to the bowl with the butter. Mix well
Add the flour, cinnamon and baking powder, mix well. Pour the batter into the loaf tin
Bake in the oven for 50 minutes or until a knife comes out clean
Add more orange juice over the loaf. Let it sit for 10 minutes before transferring onto a wire rack. Cool completely before serving
Serve with a little butter, yoghurt or ice cream
