Passionfruit Muffins

Ingredients
6 passionfruit
¼ cup raspberries (optional)
100 grams butter, softened
3 eggs
1 cup flour
½ cup brown sugar or coconut sugar
1 ½ teaspoons baking powder
Pinch of salt
Method
Preheat the oven to 180°C on fan bake. Line a muffin tray with 12 muffin liners
In a large bowl combine the butter and sugar until light and fluffy, Beat the in eggs, one at a time. Sieve the flour, baking powder and a pinch of salt. Add the pulp of 4 passionfruit and half of the raspberries
Scoop the mixture into the muffin liners and bake for 20 minutes or until the muffins are golden
Allow the muffins to cool and cover with the pulp of the remaining passionfruit and raspberries
