Pear & Cinnamon Loaf

Pear & Cinnamon Loaf

Preparation: 10 minutes
Ingredients
1 pear, core removed & chopped into small cubes
1 ½ cups whole wheat flour
2 eggs
½ cup maple syrup
½ cup milk of choice
1/3 cup butter, melted
¼ cup Greek yoghurt
2 tablespoons walnuts (or nut of choice)
1 teaspoon cinnamon
1 teaspoon baking powder
Pinch of salt
Method
Preheat the oven to 180°C fan bake – line a loaf pan with baking paper
In a bowl, beat the eggs, then add the milk, butter and maple syrup. Mix well
Add the pear, yogurt, baking powder, cinnamon, and salt, mix well. Add the flour and mix well
Pour the batter into the loaf pan, top with walnuts and bake in the oven for 35-40 minutes. To make sure it is cooked through place a knife or toothpick into the loaf before removing from oven. If the knife or toothpick comes out clean, it is ready!
Let the loaf cool on a wire rack before serving. It's best served warm and crispy from the toaster with a little butter
