Pear Upside-Down Cake

Pear Upside-Down Cake

Ingredients
4 pears, peeled, cored and quartered
Finely grated rind of 1 orange
1 ½ cups brown sugar
1 cup vegetable oil
1 level tablespoon ground ginger
1 teaspoon of vanilla extract
3 eggs
2 ½ cups flour
2 ½ teaspoons baking powder
½ cup milk
Orange Syrup
1/3 cup freshly squeezed orange juice
50g butter
1 cup brown sugar
½ teaspoon ground cinnamon
Method
Preheat oven to 200°C
Grease and line a large cake tin
Combine the syrup ingredients in a small pot and bring to boil.
Reduce heat; simmer until reduced and thickened, set aside
Arrange the pear slices on the base of the cake tin and pour over the orange syrup
Use an electric mixer to beat the sugar, oil, orange rind, ginger, vanilla extract and eggs in a large bowl
Gently beat in the flour, baking powder and lastly the milk
Pour the mixture over the syrup and pears
Bake for 10 minutes, then reduce heat to 180°C and bake for a further 50 minutes or until a skewer inserted into the centre comes out clean
