Plum Sauce

Plum Sauce
Serves: 2 litres
Preparation: 15 minutes
Cooking: 2 hours
Ingredients
1kg red plums, halved and stone out
1 ½ cups malt vinegar
½ cup brown sugar
1 teaspoon salt
½ teaspoon ground cloves
¼ teaspoon cayenne pepper
1 teaspoon chilli powder
1 tablespoon fresh ginger, finely grated
1 medium onion, chopped
2 cloves garlic, crushed
½ cup port (optional)
Method
Put all the ingredients into a large saucepan so the pan is less than half full
Bring to the boil and simmer for 2 hours, stirring occasionally throughout to ensure the mixture doesn’t catch on the bottom of the pot
Pour into hot sterilised bottles or jars
