Pumpkin and Caramelised Onion Pie

Ingredients
1 small pumpkin, peeled and cut into small cubes
1 tablespoon olive oil
1 small onion, thinly sliced
1 tablespoon brown sugar
2 garlic cloves, crushed
75g feta cheese, crumbled
1 cup baby spinach
1 large sheet short crust pastry
Method
Preheat oven to 180°C on fanbake
Heat a pan over medium heat and add olive oil. Add onion and cook until it starts to brown. Add sugar, garlic and spinach. Turn the heat down and cook for a further 5 minutes, stirring frequently
Fill a large pot with water and bring to boil. Add the pumpkin and cook until the pumpkin softens, and a knife can pierce easily. Remove from the heat and drain the water
Place the pumpkin into a bowl and mash until it’s a puree. Add the onion mixture and feta cheese and stir well
Transfer pastry into a greased baking tin. Add the pie filling and place in the oven
Bake for 25-30 minutes or until the top and crust is golden
Remove from the oven and let it sit for 15 minutes before serving
