Quinoa Radish & Cucumber Salad with Feta
Serves: 4 as a side
Preparation: 10 Minutes
Cooking: 20 Minutes
Ingredients
1 bunch radishes, sliced
1 cucumber, sliced
1 cup uncooked quinoa
Handful mint leaves
1/3 cup crumbled feta
Handful fresh parsley
Dressing
Juice of 1 lemon
1 tablespoon white wine vinegar
2 garlic cloves, minced
2 tablespoons olive oil
Small pinch of salt
Pinch of black pepper
Method
Cook quinoa according to packet instructions and set aside to cool
In a small bowl, combine dressing ingredients and mix well
In a bowl, combine quinoa, sliced cucumber, feta and radishes and then place onto a serving plate. Top with mint leaves, fresh parsley and drizzle over the dressing
