Red Cabbage Slaw with Tangy Herb Dressing

Slaw Ingredients
½ small red cabbage, cored and thinly sliced
2 carrots, julienned or peeled into thin strips
1 bunch of spring onion, greens only, finely sliced
½ cup chopped fresh parsley
¼ cup slivered almonds
Dressing Ingredients
¼ cup chives, finely chopped
1/3 cup apple cider vinegar or white wine vinegar
3 tablespoons olive oil
1 tablespoon finely chopped fresh ginger root
1 teaspoon Dijon mustard
Pinch salt & freshly ground black pepper
Method
In a small bowl, combine the dressing ingredients and mix well.
In a large salad bowl, toss together the cabbage, carrots, spring onion and parsley.
Pour the dressing over the salad and top with almonds.
