Roasted Pear and Red Onion Salad with Halloumi
Serves: 6 as a side
Preparation: 10 Minutes
Cooking: 20 Minutes
Ingredients
4 pears, sliced lengthwise
1 medium red onion, cut into wedges
75g halloumi cheese, sliced (optional substitute tofu)
4 sprigs fresh thyme
3 tablespoons olive oil
2 tablespoons maple syrup
2 tablespoons seeds of choice
Method
Preheat the oven to 180°C
Spread sliced pears, onion wedges and thyme on an oven tray and drizzle with olive oil and maple syrup
Roast for 20 minutes or until tender then turn ingredients over. Bake for a further 10 minutes or until caramelized. Remove from the oven
Heat a skillet over medium heat and add slices of halloumi and cook for 1-2 minutes on each side or until slightly brown
Arrange pears, onion and halloumi on a serving plate
Sprinkle with seeds and serve warm
