Roasted Pumpkin and Feta Salad
Serves: 6

Cooking: 30 minutes
Ingredients
1kg pumpkin, or 1 small pumpkin, peeled and chopped coarsely
1 tablespoon olive oil
400g tin of chickpeas, rinsed and drained
1 red onion, finely sliced
2 cups baby spinach
100g feta cheese
Dressing ingredients
1 clove garlic, crushed
2 tablespoons olive oil
2 tablespoons white wine vinegar
Method
Preheat oven to 180°C on fanbake
In a bowl coat the pumpkin with olive oil then place on oven tray. Roast for 15 minutes or until tender
While the pumpkin is cooking, mix dressing ingredients together
In a large bowl, combine pumpkin, chickpeas, onion, spinach and dressing. Toss gently
Sprinkle with feta cheese and serve warm
