Spiced Feijoas & Pears

Spiced Feijoas & Pears
Serves: 4
Preparation: 10 minutes
Cooking: 15-20 minutes
Ingredients
4 feijoas, peeled
2 pears, peeled & halved
1 cinnamon stick
1 vanilla pod (or 1 teaspoon vanilla extract)
1 tablespoon honey
Squeeze lime or lemon
1 cup water
Method
Place the pears in a saucepan with a little water, lime/lemon juice, cinnamon stick, vanilla pod and honey
Cover and simmer gently until almost tender (around 10 minutes). Add the feijoas and simmer for another 5 minutes until feijoas are tender
Remove the fruit with a slotted spoon and place in a serving dish
Boil the remaining liquid over a high heat until reduced by two thirds and pour over fruit
Garnish with mint and serve with yoghurt
