Strawberry Crumble

Strawberry Crumble

Cooking: 35-40 minutes
Ingredients
2 ½ cups fresh strawberries, diced
1 cup rolled oats
¾ cup whole wheat flour
¼ cup brown sugar
¼ teaspoon fresh ginger, grated
1/3 cup butter or coconut oil, melted
Juice of 1 lemon
Salt
Method
Preheat the oven to 180°C and line a 20x20cm dish with baking paper
Combine the oats, flour, sugar, ginger and a pinch of salt. Mix in the melted butter
Place half of the oat mixture into the dish and press down to make sure all the base is covered. Add the strawberries and top with the remainder of the oat mixture
Drizzle with lemon juice and bake for 35-40 minutes or until the crumble is golden. Allow to cool before serving
