Tamarillo & Almond Cake

Ingredients
4 tamarillos, peeled and sliced
¼ cup brown sugar
150g butter, melted
¾ cup brown sugar
2 eggs
¼ teaspoon cinnamon
¾ cup flour
½ teaspoon baking powder
100g sliced almonds
Topping
25g butter, melted
¼ cup brown sugar
100g sliced almonds
Method
Preheat oven to 180°C and line a 20cm cake tin with baking paper
In a bowl, combine the tamarillos with sugar and stir. Leave for 10 minutes
In a large bowl cream butter and sugar until fluffy. Add eggs and mix well. Fold in cinnamon, flour, baking powder and almonds
Pour mixture into the cake tin. Place tamarillos over the top and bake for 30 minutes
While the cake is cooking, combine topping ingredients and mix well
Remove the cake from the oven after 30 minutes and add the topping evenly
Bake for another 20 minutes or until an inserted skewer comes out clean
Cool and serve with plain yoghurt
