Tamarillo Salsa
Serves: 1 cup

Ingredients
5 tamarillos, peeled and diced
½ red onion, finely diced
½ red chili, seeds removed, finely chopped
½ cup coriander leaves, roughly chopped
1 tablespoon maple syrup
Freshly ground pepper
Method
Combine all ingredients in a bowl and season to taste
Allow to marinate for one hour
Serve with pork, chicken or home-made burgers
