Tangelo, Fennel and Avocado Salad

Ingredients
3 medium tangelos, peeled and sliced
1 small red onion
1 fennel bulb, thinly sliced
1 avocado, sliced
4 cups rocket or mixed salad greens
Dressing
Juice of 1 lemon
1 small garlic clove, minced
4 tablespoons olive oil
Pinch salt & black pepper
Method
In a medium bowl combine the tangelos, red onion, fennel, avocado and rocket
In a small bowl mix the salad dressing ingredients. Drizzle over the dressing, garnish with fennel fronds and serve
