BBQ Summer Fruit Platter

BBQ Summer Fruit Platter
Serves: 6-8
Preparation: 10 minutes
Cooking: 3-4 minutes each side
Ingredients
Oil or cooking spray to coat BBQ grill
2 firm plums
2 firm peaches
2 firm nectarines
2 firm apricots
1/2 cup balsamic vinegar
1 small, peeled chunk ginger root, 1/2-inch
2 tablespoons brown sugar
Ground black pepper (optional)
Method
Heat BBQ to a medium heat
Coat the surface of the BBQ with oil or spray to prevent the fruit sticking
Wash and halve all fruit and take out the stone, skewer 3-4 pieces of fruit
Place fruit cut side down on grill and cook 3 to 4 minutes until warmed through and evenly marked
To make glaze reduce remaining ingredients by half in a pot over medium-high heat.
When it is like syrup discard the ginger
Place fruit skewers on a platter and drizzle glaze over the fruit
Serve with mascarpone or yoghurt
