Apricot Tart

Apricot Tart
Serves: 4 to 6
Preparation: 15 minutes
Cooking: 20 minutes
Ingredients
4 apricots, stones removed, quartered (or stone fruit of your choice)
1 Egg
2 cups almond meal (or almond flour)
1 Tablespoon coconut oil, melted (or neutral oil of your choice)
1 Tablespoon maple syrup
1 Tablespoon coconut sugar (or brown sugar)
Pinch of salt
Method (7 ingredients)
Pre-heat oven to 180˚C on fan bake and line a loaf pan with baking paper
In a bowl, mix the almond flour, egg, coconut oil, maple syrup and salt until everything is sticking together. If mixture is too wet, add some more flour and if it’s too dry add more coconut oil
Press the mixture into the loaf pan and then layer with the apricots. Sprinkle the coconut sugar over the apricots and place in the oven
Bake for 15-20 minutes, or until the crust is slightly golden
Serve warm with a serving of ice cream or yoghurt
