Apricot Breakfast Crumble

Ingredients
7 apricots, halved and pitted
3 tablespoons brown sugar
2 cups oats
1 teaspoon ground cinnamon
½ teaspoon ground ginger
2 tablespoons olive oil
4 tablespoons water
¼ cup almonds, chopped (optional)
To serve (optional)
Greek yoghurt
Coconut chips
Method
Preheat oven to 180°C
Place apricots into a baking dish
In a bowl, combine oats, water, cinnamon, ground ginger, almonds, olive oil and brown sugar
Cover apricots with the mixture and ensure it’s evenly spread. Bake for approximately 20-25 minutes or until the topping is slightly golden
Remove from the oven and allow to cool
Scoop into serving bowls and serve with toppings of choice
