Cherry Chocolate Cake

Cherry Chocolate Cake
Serves: 8-10
Preparation: 10 minutes
Cooking: 20-25 minutes
Ingredients:
2 cups cherries, pit removed, halved
2 eggs
1½ cup brown sugar
1 ¾ cups all-purpose flour
½ cup cocoa powder or cacao
1 ½ teaspoons baking powder
1 ½ teaspoons baking soda
½ teaspoon salt
1 cup milk
½ cup vegetable oil
½ cup boiling water
Chocolate ganache ingredients:
Flesh of 2 avocado
½ cup cocoa powder
¼ cup maple syrup
To decorate: 1 cup cherries, pit removed, halved
Method:
Preheat the oven to 180°C on fan bake. Line two 23cm round pans (or one larger pan if you are making a single layer cake)
In a large bowl, stir together the sugar, flour, cocoa, baking powder, baking soda and salt. Add the eggs, milk and oil. Stir in the boiling water and ensure that all ingredients are mixed well. Gently fold through the cherries
Pour the batter evenly into the lined pans
Bake for 20-25 minutes or until a toothpick inserted into the centre comes out clean
Cool in the pan for 5 minutes before placing onto a wire rack to cool completely
While the cakes are baking, prepare the chocolate ganache. In a food processor, blend the avocado, cocoa powder and maple syrup until smooth.
Place ganache in the fridge until the cakes are cool
Once the cakes have cooled, spread both layers of the cake with the chocolate ganache. Top with the cherries
