Cherry Tart

Ingredients
Crust
125g butter, melted and cooled
½ cup brown sugar
1¼ cup standard flour
¼ teaspoon salt
Filling
2 handfuls of cherries, pitted
2 eggs
1/3 cup milk
2 tablespoons standard flour
6 tablespoons brown sugar
Optional
Icing sugar for dusting
Method
Preheat oven to 180°C. Grease a tart pan ready with a removable bottom (we used a 26cm pan)
To make crust, stir together the butter and sugar, add the flour and salt to make a soft crumbly dough. Press dough into tart pan. Bake for 10 to 15 minutes or until slightly golden. Remove from the oven and allow to cool
To make the filling, whisk together the eggs, milk, sugar and flour. Arrange the pitted cherries over the tart base and pour over the filling.
Place in the oven and bake for 40-45 minutes or until the filling is firm. Allow the tart to cool completely before removing from the tart pan
Dust with icing sugar, add a few fresh cherries and serve with plain yoghurt
