Christmas Cherry Chutney
Serves: 3 litres
Preparation: 30 minutes
Cooking: 1 ½ - 2 hours
Ingredients
1kg fresh cherries
2 Granny Smith apples, peeled, cored and chopped
2 medium onions, chopped finely
300g raisins
1 tablespoon ground ginger
2 teaspoon salt
1 teaspoon ground nutmeg
2 teaspoon ground cinnamon
1⁄2 teaspoon ground cloves
1⁄4 teaspoon cayenne pepper
500g brown sugar
4 cups malt vinegar
Method
Wash the cherries, remove the stalks, and in a saucepan simmer in 1 1⁄4 cups vinegar until soft
Allow to cool, remove and discard the stones
Chop raisins roughly and add apples, onions, all the spices and salt
Cook until onion and fruit is tender, then add the sugar and remaining vinegar
Stir until sugar is dissolved, cook slowly until thick, stirring occasionally throughout cooking to ensure the chutney doesn’t stick to the bottom
Pour mixture into hot, clean jars and seal
Note: This aromatic chutney is the perfect Christmas condiment with a New Zealand twist, try with ham, turkey or chicken.
