Cinnamon Spiced Jazz Apple Pancakes

Ingredients
Cinnamon spiced Jazz apples
2 Jazz apples, peeled and cut into bite-sized pieces
1 teaspoon ground cinnamon
2 teaspoons brown sugar or coconut sugar
3 tablespoons water
Banana pancakes
2 bananas
2 eggs
1 cup quick-cook oats
3 tablespoons milk of choice
1 teaspoon baking powder
To serve (Optional)
Maple syrup
Yoghurt
Method
To cook the apples, place the apple pieces into a small saucepan over a low-medium heat. Add the water, sugar and cinnamon. Cook covered for 5-7 minutes until soft and the water has evaporated
To make pancakes, add all ingredients into a blender or food processor and blend until smooth. Set aside and allow to sit for at least 5 minutes so the batter can thicken slightly
Heat a large non-stick fry pan over a medium heat. Add about ¼ cup of pancake batter for each pancake
Cook for approximately 2 minutes on each side until golden brown. You’ll know that they are ready to flip when little bubbles appear on the surface
Once the pancakes have cooked, top with the cinnamon-spiced apples, a dollop of your favourite yoghurt and a drizzle of maple syrup
Note: when cooking the pancakes, don’t have the heat too high otherwise the outside of the pancakes will burn before the middle is cooked through
