Cucumber and Avocado Rolls
Serves: 6 as a side

Ingredients
1 large cucumber or 2 small
2 ripe avocados
¼ red onion, chopped
1/3 cup almonds
¼ teaspoon black pepper
Juice of 1 lemon
Handful fresh basil
Toothpicks
Method
Thinly slice the cucumber lengthways using a mandolin or vegetable peeler
Add avocado, red onion, almonds, black pepper, lemon juice and basil into a food processor and pulse until smooth and well combined
Take one slice of cucumber and add around 1 teaspoon of the avocado mixture to one end. Roll the cucumber slice tightly and press it in so filling is secure
Secure the roll with a toothpick and repeat until all cucumber slices are used
Top with chopped almonds or extra basil
