Garlic Potato Hash

Garlic Potato Hash
Serves: 4 as a side
Preparation: 10 Minutes
Cooking: 20 Minutes
Ingredients
3 garlic cloves, minced
3 large potatoes, washed and diced into 2cm cubes
2 capsicums, diced
1 small onion, diced
2 tablespoons olive oil
Small pinch of salt and pepper
1 teaspoon paprika
½ teaspoon ground chilli powder (optional)
Handful of parsley, roughly chopped
Method
Place the potatoes in a medium saucepan, cover with water and bring to a boil over a medium-high heat. Reduce to a simmer and cook for around 10 minutes until potatoes are tender
Drain the potatoes and transfer to an oven tray to dry
Heat a large skillet or fry pan over medium heat and add olive oil, onion and capsicum. Cook for 3 minutes or until they begin to soften, stirring often
Add the potatoes, garlic, salt, pepper, paprika and chilli powder. Cook for 7-9 minutes or until the potatoes begin to brown
Remove from the skillet and top with parsley. Serve warm
