Kohlrabi, Apple & Fennel Slaw
Serves: 6 as a side

Ingredients
1 large (or 2 small) kohlrabi, trimmed, peeled, cut into fine matchsticks
½ small head of red cabbage, finely sliced
1 large (or 2 small) fennel bulb, finely sliced
1 large granny smith apple, grated, tossed in a little lemon juice
2 spring onions, finely sliced
¼ cup dried cranberries
¼ cup mixed pumpkin and sunflower seeds, toasted
A large handful of parsley, chopped
Dressing ingredients
½ cup Greek yoghurt
2 tablespoons mayonnaise
Juice of ½ lemon
1 teaspoon wholegrain mustard
Method
In a large bowl toss together the kohlrabi, cabbage, fennel, apple, spring onions, cranberries, toasted seeds and parsley
Make the dressing in a small bowl by combining the yoghurt, mayonnaise, lemon juice and mustard. Mix well
Just before serving, drizzle over the dressing and gently mix through the slaw
