Nectarine and Plum Salsa

Nectarine and Plum Salsa
Serves: 6 to 8

Ingredients
4 nectarines diced
6 yellow center plums, diced
1 red onion, diced
Juice of limes or lemons
Handful coriander leaves, sliced finely
Handful mint leaves, sliced finely
1 red chilli, diced finely and deseeded
1 tablespoon white balsamic vinegar
Method
Place all prepared ingredients in a large bowl, pour over lime/lemon juice, passionfruit pulp and vinegar. Mix everything to ensure fruit is well coated
Refrigerate until ready to serve
When serving mix in fresh herbs
NB: This salsa is perfect with chicken and fish
