Grilled Summerfruit Skewers

Grilled Summerfruit Skewers
Serves: Makes 8 skewers
Preparation: 15 minutes
Cooking: 5 minutes
Ingredients
4 nectarines, quartered and pitted
4 plums, halved and pitted
4 apricots, halved and pitted
4 peaches, quartered and pitted
8 bamboo skewers
2 tablespoons olive oil
3 tablespoons honey
¼ cup plain yoghurt
Juice of 1 lime
6 mint leaves, chopped
Method
Soak bamboo skewers in water for 10 minutes to avoid burning
Thread 1-2 pieces of each fruit on each of the 8 skewers. Drizzle with honey
Heat the BBQ on a medium heat and add olive oil. Place the fruit skewers onto the grill with the cut side down. Turn after 2 minutes and cook for another 2-3 minutes
Drizzle with lime juice and serve with yoghurt and mint leaves
