Tangy Apple Salad
Serves: 4-6

Ingredients
3 green apples, cut into matchsticks
1 fennel bulb, thinly sliced
¼ cup shaved Parmesan cheese
½ cup walnuts, roughly chopped
1 small handful mint leaves, roughly chopped
1 small handful dill, roughly chopped
Dressing
1/4 cup olive oil
2 tablespoons white wine vinegar
1 tablespoon honey
3 tablespoons lime juice
1 garlic clove, minced
Method
Add all the salad ingredients into a bowl and mix well
Combine the dressing ingredients and pour over salad. Gently toss salad. Best served cold
