Upside-down Apple Cinnamon Cake
Serves: 8 to 10
Preparation: 15 minutes
Cooking: 1 hour 10 minutes
Ingredients
2 cups slightly stewed Granny Smith and Gala apples
150g butter, melted
1 cup dark brown sugar
2 eggs
2 cups plain flour
2 teaspoons ground cinnamon
2 teaspoons baking powder
1/2 cup sultanas
1/2 cup chocolate chips (optional)
Topping Ingredients
2 to 3 Granny Smith and Gala apples, peeled and cut into wedges
3 tablespoons unsalted butter
1/4 cup dark brown sugar
Method
Preheat oven to 160°C
Cream the butter and sugar together until fluffy, add eggs to sifted flour, baking powder, cinnamon and mix until combined
Fold through stewed apple, sultanas and chocolate chips (if using)
Topping: Place a pan over low heat and melt the butter then add 1/4 cup dark brown sugar and stir. When the sugar has dissolved, turn off heat and leave pan on element
Pour topping into a one-piece baking pan (no removable edge) and arrange the apple wedges in a circular pattern on top of the mixture
Pour the batter over the fruit and bake for 55 to 60 minutes or until a skewer comes out clean
Allow to cool for 5 to 10minutes, then turn out onto a serving platter with the apple top showing
